Tips for Your Healthy Eating

Saints Tip #1: Do you find your low-fat chocolate cake recipe is as dry as Styrofoam and almost as tasteless. Don’t waste calories on dry, crumbly cake! Try using a fruit puree to boost sweetness and moisture without adding grams of fat. Pectin in the fruit helps trap moisture in the batter in much the same way butter or shortening does. Substitute applesauce, mashed bananas or prune puree for up to half the fat in your favorite cake recipe.
Saints Tip #2: Bottled fat-free salad dressing seems suspiciously thick and way too salty. Make your own fast, fresh salad dressing using balsamic vinegar. Its rich taste means you can use less oil. Just mix the vinegar with a splash of olive oil and your choice of seasonings. For an even quicker fix, dilute bottled dressings with balsamic or other flavored vinegars.
Saints Tip #3: Live for Mexican food, but what’s the point of enchiladas without cheese? Try using extra sharp cheddar cheese; it has more flavor per ounce than mild or processed cheddar so you can use less. You’ll get all the flavor, a fraction of the fat. Always grate instead of slicing cheese--you'll use less. And wait until the last few minutes of baking to sprinkle the cheese on top so you get the full taste of every last shred.
Saints Tip #4: Do you find fat-free soups and sauces disappointingly thin! Two tips: use evaporated skim milk to replace cream in soups and sauces for lots of favor and nearly zero fat. Next, add pureed vegetables to thicken soups and stews. Our best bet: potato soup made with evaporated milk and thickened with mashed potatoes. A creamy, dreamy bowl of comfort food!
Saints Tip #5: Have a craving for french fries? Two words: oven fried. Slice potatoes into french fries, spray with a butter-flavored cooking spray and bake in a 375 oven. Turning makes them crisp on all sides; then season to taste. You'll have great tasting fries with only a trace of fat.
